Meaty Instant Pot Lasagna
Lasagna has long been one of my favorite meals. I always picture myself as a human version of Garfield the cat when we have it for a meal. Sometimes there are leftovers, but they seldom make it through the night, and never through the next day.
My Computer Beginnings
To a lot of people, Atari means games. Old-school games. But for a little over a decade, from 1979 to 1993, they were a respected
“Never Leftover” Deviled Eggs
I learned a nice little trick for deviled eggs this past week. I always joke around that there are never leftover deviled eggs at family events, church gatherings, etc.. As a social experiment, I frequently volunteer to make them, and then go “overboard” to see if we can make enough so that there are actually leftovers. My prior record was 4 dozen at a family event. That’s 96 halves. They were all gone.
Santa and Me
It seemed innocent enough. My cousin Trish Hudson had been talking about having my wife and I, along with my sisters over for a meal sometime. My sister’s birthday had just passed a couple of days earlier, and I got one of those notifications in Facebook that said “Trish Hudson mentioned you in a post”. I clicked the link, glanced at it quickly, and totally misunderstood.
Lemon Garlic Parmesan Shrimp Pasta
I stumbled across the recipe when I was looking for something “different” to do with shrimp. It’s become a favorite for my wife and I.
I’ll Miss My Thin Mints and Tagalongs
I want to start this out by saying I’m not a big fan of boycotts. As a matter of fact, I will pretty much tell

Making Technology Fun Looking at the title, this probably looks like a gadget article, but it’s really not. It’s more about technology and humor, with
IP and the Art of Cooking
First of all, my apologies to any of you that stumbled on to this by mistake. Even though I work (and have lots of friends) in the Information Technology field, “IP” in this case is not “Internet Protocol”, but “Instant Pot”. Sorry, this is a cooking story.
Cashew Chicken & Rice w/Mushrooms
After having the Instant Pot for a few days, I decided I’d try my hand at coming up with something on my own. I like chicken, and it’s a natural for the IP. The 2 attempts we’ve made with rice in the menu ended up with the rice a bit “mushy” for my taste, so I decided that chicken and rice would be a good choice to experiment and see if I can get the “rice added to food” process right.
Yeah, We Joined the Cult – We Bought an Instant Pot
I wish I could say I purchased our Instant Pot carefully after doing tons of research and making a highly informed decision; but I didn’t. It was already January 4th (2018), our anniversary was coming up in just over a week, and I didn’t have a thought yet as to what I was going to get Gini.
Celtic the Boston – RIP
Yesterday was a rough day. Gini called me at work to let me know that our neighbor had called. Our Boston Terrier Celtic had gotten
Honoring our Fallen at Snowball Express
Snowball Express is an event held every year serving the children of our fallen military heroes. It’s a time for the kids and parents with a common bond to share a safe space, meet supportive friends, and have some “decompression time”. This post is about the hardest “job” I’ve had with the Patriot Guard Riders, which was at this year’s Snowball Express.
My name is Herb Parsons, your semi-average 66-year-old guy. I’ve been married to my wife Gini for 28 years, and between us, we have 5 children and 11 grandchildren (currently).
